  Jamaican Easter Bun Recipe with Stout

Makes 2 Jamaican Easter Buns

  3 1/2 Cups Flour
  1 Cup Stout or Beer
  1 1/2 Cups Sugar (Adjust sugar if desired)
  1 Cup Raisins, Currants, Mixed Peels
   1/2 Cup Maraschino Cherries
   1/2 Tablespoon Cinnamon Powder
   1 tablespoon Vanilla Extract
   1/2 Tablespoon Rosewater
   2 Tablespoons Baking Powder
   2 Tablespoons Melted Margarine or Butter      1 Beaten Egg
    1 Tablespoon Nutmeg
    1/2 Tablespoon Anise Extract 
    1 Pinch of salt

In a large mixing bowl, mix together flour, salt, baking powder, spices and sugar. Mix thoroughly and add fruit. Save a few cherries to garnish the top of each loaf. Make a well in the center of mixture and add melted butter and beaten egg. Mix again until like coarse breadcrumbs. Make another well in center of mixture and add beer or stout. Mix the whole thoroughly and turn the Easter Bun batter into well-greased rectangular baking pans. Bake Jamaican Easter Buns for 1 hour and 15 minutes at 300°F.  Garnish with Cherries while Jamaican Easter Buns are still warm. Makes two meatloaf pans.
